tilapia - one filet per person
mayonnaise - 2 tbl per filet
1 red, orange or yellow pepper, sliced very thin
1 medium onion, sliced very thin
sea salt
aluminum foil

Directions:
Directions:
You will be making aluminum oil "packets" - individual portions of fish. You could also do this in parchment paper if you wish.

Saute the onion and peppers in some nice olive oil. Sprinkle with sea salt.

Put one filet of fish on the foil or paper.
Spread 2 tbl of mayonnaise on the fish
top with a spoonful of the veggies

close the packet tightly & bake on 350 for 15 minutes

serve with mashed potatoes and some steamed veggie and with a fresh lemon wedge

Don't worry about the amount of the mayonnaise - it all becomes a watery sauce which you don't have to eat. But having it there keeps the tilapia moist until it's done baking. Trust me on this - it's delicious!
