1 1/2 c. uncooked elbow macaroni
3 c. fresh broccoli florets
2 c. fresh cauliflowerets
3 large carrots, halved and thinly sliced
2 celery ribs, sliced
1 medium onion, chopped
1 T. butter
1/4 c. flour
1 c. milk
1 c. chicken broth
3 c. (12 oz.) shredded sharp cheddar cheese
1 T. Dijon mustard
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. paprika

Cook macaroni according to package, add the broccoli, cauliflower, carrots and onions during the last 6 minutes. Drain and transfer to a greased 9x13 backing dish. Saute onion in butter until tender. Sprinkle with flour, stir until blended. Gradually stir in milk and broth. Bring to a boil, cook and stir for 2 minutes or until thickened. Stir in the cheese, mustard, salt and pepper. Pour over macaroni mixture, stir to coat. Sprinkle with paprika. Bake uncovered at 350 for 15-20 minutes or until heated through.
