Ingredients:  
3 c flour; 1 tsp salt; 1tsp baking soda; 1/4 tsp baking powder; 3 tsp cinnamon; 3 eggs; 2 c sugar; 1 c oil; 2 c grated zucchini; 1 tsp vanilla; 1 c chopped walnuts; 1 c raisins (optional)

Directions:
Directions:
Combine flour, salt, baking soda, baking powder & cinnamon. Beat eggs until light. Stir in sugar, oil, zucchini, and vanilla. Add dry ingredients & then the nuts. Pour into greased pans. Bake in 350 oven for one hour. Makes 2 loaves.
