1 large orange
2/3 cup orange juice
1 1/2 cups flour
3/4 cup sugar
1 stick butter, cut small
1 large egg, beaten slightly
1 teaspoon baking soda
1 teaspoon baking powder

Directions:
Directions:
Chop the entire orange (including peel). In blender process orange pieces, orange juice, butter, and beaten egg. Mix together in large bowl the flour, sugar, soda, and baking powder. Add blender mixture to dry ingredients until just combined. Batter should be lumpy. Spoon into 16 greased muffin cups, filling 2/3 full. Bake 15-20 minutes at 400.
