1 pound Phyllo
1 pound butter, melted (may not need quite his much)
1 dozen eggs
1 1/2 pounds feta cheese, crumbled
24 oz. cottage cheese, small curd
2 T dry parsley
2 T dry minced garlic
1 tsp. garlic powder
1/4 tsp. salt

Directions:
Directions:
Beat eggs well. Add parsley, onion and garlic. Combine all cheeses and add to eggs. Mix well.
Layer about 12 sheets of phyllo, buttering each sheet and making sure each sheet goes up the side of the pan. I use a 10x16 pan. Pour egg mixture on this and layer the rest of the phyllo sheets, buttering each sheet. Top sheets do not go up side of pan. Bake at 325º until golden brown and inserted knife comes out clean (about 45 minutes). Allow to sit for a few minutes before cutting into squares.

For two pans, I double this recipe by mixing 1 recipe in one bowl and second recipe in second bowl...easier this way. I buy the 48 oz. cottage cheese container at Costco and divide between 2 recipes. Best buy.
