2 C cooked yellow squash
1 C onion / chopped
3/4 stick butter or margarine
1 C mild cheddar cheese / shredded
2 C saltine cracker crumbs
2 eggs
1 C evaporated milk
1 tsp salt
1/2 tsp pepper

Directions:
Preheat oven to 350/375 º. Use the lower temperature if your oven runs "hot". Mash cooked squash, add other ingredients and mix well. Pour into 1 qt. casserole dish that has been sprayed with cooking spray. Bake for 35 - 45 minutes.

This recipe has been in our family for 20+ years. It is better if you do not crush the saltines too finely.
