Glaze: Mix 1 c brown sugar with 2 tsp prepared mustard & small amount of fruit marmalade (or maple syrup)
Place brisket on rack in roasting pan. Add enough water to touch top of rack. Cover tightly with heavy duty aluminum foil. Place in 350º preheated oven. Bake for one hour. Add choice of veggies, recover with foil and bake until tender. Total cooking time 2-3 hours (depending on size of brisket). Remove liquid; turn brisket; add glaze. Bake uncovered 10 minutes longer
