1/4 c. kosher salt
1/4 cup black pepper
1/4 c. chili powder
1 T. dried oregano
1 T. thyme
1 tsp. cayenne pepper
8 lb. Boston butt or pork shoulder

Bake @250 for 8 1/2 hours. Rub the roast with the spices. Seal in foil with the fat side on top. Let rest 30 minutes, pull. Don't thru away the juice - use it to moisten the pulled pork.
