3 cups potato chips, coarsely crushed
1 large egg
2 tablespoons milk
1 lb boneless, skinless, chicken breasts, cut into 1 1/2-inch chunks

Directions:
Directions:
Preheat oven to 450 degrees. Place crushed potato chips in medium bowl. Combine egg and milk with wire whisk in small bowl. Dip chicken in egg mixture, then coat with potato chips, pressing coating gently on each chicken piece. Arrange chicken on lightly greased baking sheet. Bake 12 minutes or until chicken is no longer pink inside.

A variation of this recipe calls for chicken dipped in a honey mustard and egg mixture and then rolled in crushed french fried onions.
