"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

12 ounces fresh broccoli florets
1 1/2 lb beef skirt steak
1 Tablespoon canola oil
3 Tablespoons minced garlic
1 Tablespoon ginger
1/2 cup oyster sauce
1/4 cup reduced-sodium chicken broth
2 Tablespoons brown sugar
2 Tablespoons lite soy sauce
2 Tablespoons dry sherry
1 medium red bell pepper

Slice steak thinly. Preheat large sauté pan on medium-high heat. Add oil and steak and cook until steak is done. Add red bell pepper the last few minutes. While steak cooks, combine remaining ingredients (except broccoli), in small bowl, until well blended. Microwave broccoli covered on High for 4-5 minutes or until desired tenderness. Stir broccoli and sauce mixture into beef. Bring to a boil; cook 2-3 minutes or until sauce thickens.©
