1 small chopped onion
1/2 cup chopped celery
1 10 oz. pkg frozen broccoli: thawed
1 tbsp. mayonnaise
1 8 oz. jay process cheese spread
1 can cream of mushroom soup
1 5 oz. can evaporated milk
3 cups cooked rice (boiled in chicken broth)
salt & pepper to taste

Directions:
In a large skillet over medium heat, saute onion, celery and broccoli in margarine 3-5 min. Add cheese, soup and milk. Stir until smooth. Place rice in a greased 8x8 pan. Pour cheese mixture over top (Do Not Stir). Bake uncovered at 325 25-30 min.
