1 cup Carolina Rice (use only Carolina NOT INSTANT)
1/2 cup sugar (more to taste)
2 tsp. vanilla
2 eggs
1 can evaporated milk
1/2 cup of water
2 cups of milk
cinnamon

Directions:
Directions:
In pot bring to boil rice and 2 cups of water, simmer till all of the water is gone. Careful not to burn the bottom.Add 1 quart of the evaporated milk,water and milk to the rice. Cover and ;cook on low till the rice and milk become very thick, stirring often. Could take 1 Hr. or longer.
Take off the heat and put in vanilla and sugar(taste for sweetness, add more if you like) and about 2 tsp. of cinnamon.Seperate your eggs, take the yolks and put in a small bowl remove some of the rice mixture and stir together, now add it back into the pot of rice (this prevents the eggs from getting stringy)
Beat the egg whites till stiff and FOLD into the rice pudding. Put in bowl, sprinkle with more cinnamon and refrigerate.
