1 qt. milk
½ c. butter
1 c. uncooked grits
1 t. salt
1-3 garlic cloves minced
1 dash (or more to taste) Tabasco sauce
1-2 eggs (it’s fine with either 1 or 2 – 2 just makes it fluffier)
1 ½ cups shredded cheddar cheese
1/3 c. butter (yes – more butter!)
½ c. grated Parmesan cheese

Preheat oven to 350 degrees. Spray a medium baking dish with Pam spray.
Bring milk to boil in a good-sized pot over medium heat. Melt ½ cup butter in the boiling milk. Gradually mix in the grits and cook 5 minutes, stirring constantly. Remove from heat and season with salt, garlic and Tabasco sauce. Beat with a whisk until smooth. Mix in the cheddar cheese, egg(s) and additional 1/3 cup butter. Pour into the baking dish and top with the Parmesan cheese. Bake I hour until firm.
