1 cup buttermilk
1/4 cup firmly packed light brown sugar
1/4 cup sour cream
1 egg
1/4 cup canola oil
3/4 cup yellow cornmeal
11/4 cups unbleached flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 T. chili powder
1/3 c. finely chopped green onions
1/4 c. grated red onions
3/4 c. grated Monterey Jack Cheese
1/2 cup chopped fresh cilantro

In a large bowl, beat together first five ingredients. Preheat oven to 400F and spray 2 mini-muffin tins with non-stick spray. In a medium bowl, stir rogether cornmeal, flour, baking powder and soda, salt and chili powder. Gradually add flour mixture to buttermilk mixture stirring until blended. Fold in onions, cheese and cilantro. Pour batter into prepared muffin tins; filling each 3/4 full.
Bake for 15 minutes or until browned and firm to touch Let cool in pan and then turn out.
