5 medium size potatoes
6 slices bacon
1 small onion, diced
Milk
Salt
Pepper
Colby or longhorn cheese, grated

Directions:
Directions:
Peel and slice potatoes thinly. Put into a casserole dish big enough to hold potatoes 3 or 4 slices on top of each other. Cut bacon sideways into 3/4” slices and fry until almost crisp. Add bacon and onion to potatoes. Salt and pepper to taste. Cover halfway with milk. Cover with a lid or foil and bake at 350 degrees. Insert a fork to determine when potatoes are tender and done – approx. 1 hour. When potatoes are done and milk is absorbed, spread enough cheese to cover top of sliced potatoes. Place dish back in oven to melt cheese. Serve when hot.
