1 lb. ground beef
1-1/8 cups corn meal
1/2 tsp. baking soda
2 eggs
1 cup milk
3/4 tsp. salt
1 can (20 oz.) cream style corn
1/2 cup bacon drippings
4 jalapenos, chopped
1/2 lb. Longhorn cheese, grated
1 large onion, grated

Directions:
Directions:
Brown meat in 10” or 12” skillet, drain and remove from heat. Mix together cornmeal, baking soda, eggs, milk, salt, corn and bacon drippings. In 9” x 13” baking pan, pour half of the cornbread mixture into pan. Add beef and sprinkle with jalapenos, cheese and onions. Pour remaining cornbread mixture on top. Bake 45 minutes at 350 degrees. Let stand a few minutes before serving. Makes 6 to 8 servings.
