1 1/2 lbs. beef, cut in 1/2" cubes
2T. oil
1 can (6oz) Snap-E-Tom Tomato Cocktail
1 Clove garlic, minced
1 tsp. oregano
1 T. chili powder
1/2 tsp. salt
Freshly ground pepper to taste
2 cans (10 oz) Ortega Tomatoes and Hot Green Chile's
4-6 servings of cooked rice (or noodles, fried tortillas or corn chips)
1 c. sour cream

Directions:
Directions:
Saute meat in oil in skillet until lightly browned. Stir in Snap-E-Tom and sprinkle with garlic, oregano, chili powder, salt, and pepper. Stir in tomatoes and Chile's. Simmer another 15 minutes. Serve hot over rice. Dress each serving with a dollop of sour cream. Serves 4-6.
