2 T butter
2 T all purpose flour
1/4 t salt
1/8 t pepper
1 c milk
1/4 t dry mustard
1/2 c grated sharp cheddar cheese (more if you want it cheesier)
14 oz can of artichokes - drained
1 10 oz pkg frozen peas, thawed
1 8 oz can water chestnuts, sliced and drained

Directions:

Melt butter over low heating heavy saucepan

Stir in flour, salt and pepper
Cool over low heat until mixture is smooth and bubbling
Remove from heat
Stir in milk
Return to heat and slowly bring to a boil, stirring constantly
Boil for 1 minute
Add mustard and cheese
Stir until cheese is melted
Add artichoke hearts, peas and water
Cook until mixture is heated, approx 5 minutes
