1 head elephant garlic
1/2 cup chopped cilantro
1 T Tony's seasoning
olive oil
water for basting

peel garlic and slice thinly and poach in boiling water until tender, drain water off, and cool. toss cilantro and garlic together. working from the cavity end of the bird stuff about half the garlic slices in between the skin and the meat being careful not to tear a hole in the skin.but the rest of the mix into the cavity of the bird. rub the bird down with olive oil and put in roasting pan with about 1/4 in water in the bottom bake at 350 for 45 to 50 minute's until done baste the bird half way through.

i like to thicken the juices from the pan with some cornstarch and serve with a cilantro risotto.
