1 lb. lean ground beef
1 jar (16oz.) thick and chunky salsa (desired heat)
1 (14.5 oz.) can diced tomatoes
1 (15 oz.) can whole kernel corn
12 corn tortillas (6 in.)
1 1/2 c. sharp cheddar cheese - shredded

Directions:
Preheat oven to 375º. Brown meat in a large skillet, stirring frequently. Drain meat when completely browned. Return meat to the pan and stir in salsa, tomatoes, and corn (all undrained). Bring to a boil and remove from heat.
Spoon 1 c. of the mixture into the bottom of a 9x13 inch baking dish. Top with 6 tortillas, overlapping if necessary. Spoon half of the remaining mixture over the tortillas and top with 3/4 c. of cheese. Top with 6 remaining tortillas and then layer the rest of the meat mixture and then cheese.
Cover with foil and bake about 25-30 minutes or until heated through.
Remove from oven, uncover and sprinkle remaining cheese over the top. Let stand 5 minutes or until cheese is melted.
