5 medium potatoes
3 T. bacon drippings
1 medium onion, chopped
4 cups milk
1 tsp. salt
Chopped parsley

Directions:
Directions:
Brown onion in bacon drippings. Add potatoes and about 1 cup water. Cover and bring to boil. Cook on low until potatoes are tender, mash with a hand masher. Add four cups of milk. Salt to taste and add parsley. Simmer to blend flavors.

TO MAKE CORN CHOWDER Add 1 or 2 stalks diced celery and 1 shredded carrots to potatoes and onions. Add two cans of kernel corn when adding milk
