2 cups coarsely mashed potatoes, 2 tbsp oil, 1/2 tsp black mustard seeds, 1 small onion, chopped, 1 tbsp green pepper finely minced, 1/2 tsp turmeric, 1/4 tsp chili (hot) powder, 1 tsp salt, 1 tbsp lime juice, 1 tbsp chopped cilantro.

Heat oil and fry mustard seeds (in pan with lid) until they pop. Add onion and green pepper and fry till limp. Add turmeric, chili powder and salt. Fry for 1 min. Add potatoes and lime juice. Mix well. Garnish with cilantro leaves.
