1 lb dry Green Split Peas
32 oz or 4 C Gluten Free Chicken Broth
2 C Water
1 tsp Salt
1/4 tsp Pepper
Ham Hock
1 Large Onion coarsely chopped
3 T Margarine
4 Carrots diced
2 C Chicken Broth or Water

Directions:
Directions:
Cook rinsed split peas in 2 cups water and 4 cups Chicken Broth along with ham shank, salt and pepper in soup pot. Saute chopped onion in margarine then add to split peas. Cook on low till split peas are soft. Remove meat and bone. Ladle split peas and cooked onion into a blender and blend till smooth (do not blend or puree carrots). Pour back into pan. Chop carrots and cut meat from ham hock into cubes. Add chopped carrot and cubed meat to soup. Add additional Chicken Broth or water to desired consistency. Season with additional salt & pepper to taste.
