2 c. brown sugar
1 c. butter
3 eggs
1 tsp. soda
1/4 tsp. salt
1 tsp. vanilla
4 c. flour
Date Filling:
1 c. brown sugar
2 tbsp. flour
1 c. water
1 c. dates

Preheat oven to 350 degrees. In saucepan, cook dates, water, flour and brown sugar until thickened, about 15 minutes. Set aside to cool. Stir together flour, baking soda, and salt; set aside. Cream shortening, add sugar. Add eggs, beating well. Beat in vanilla. Add flour mixture to butter mixture. Form the dough into a ball and refrigerate for 15 minutes. On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together. Bake 15 minutes in the preheated oven, or until browned.
