2 Cups Corn Kernals (canned, fresh or frozen)
1 Avacado cut into 1/2 inch cubes
1/2 Pint Cherry Tomatos quartered
1/2 cup sliced scallions

Dressing:
2 T Olive Oil
1 T Lime Juice
2 T Chopped Cilantro
Salt and Pepper to taste

Directions:
Directions:
Combine the corn, avocado, tomatoes and scallions in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.

Serve with Frito Scoops or Tortilla Chips
