1 Beef Chuck roast 5-6lbs.
1 large onion sliced
1 8oz. can tomato sauce
1/2 water
1/4 cup cider vinegar
1/4 cup catsup
3 tbsp. brown sugar
1/2 tsp. worstershire sauce

Directions:
Directions:
Brown roast in olive oil till nice and brown all around.You can use another cut of beef, but I prefer the chuck roast for flavor and tenderness.

Once beef roast is brown add the onions, water and can of tomato sauce and simmer for about 1 hour.

After one hour add the remainder of the ingredients and simmer for at least 2 more hours. When fork is inserted the meat should feel nice and tender, you can cook longer if necessary/ Remove meat to a platter and let rest for 10 minutes.

To the juice in pot add some corn starch and water mixture to thicken for gravy.
