Rice Dessert Recipe

2 c. milk
1/4 c. rice
1/4 tsp. salt
1 tsp. gelatin
2 tbsp. cold milk
1 tbsp. butter
1/4 c. sugar
1/3 c. blanched almonds, chopped
1 tsp. vanilla
1 tbsp. sherry
1/2 c. heavy sweet cream

Scald milk in 2 qt. pan. Add rice and salt. Cover tightly and simmer for 1 hour. Stir once in awhile. Remove from heat. Dissolve gelatin in cold milk. Add gelatin mixture, butter and sugar to hot rice. Cool. Add vanilla, almonds and sherry. Beat cream stiff. Fold into rice mixture. Put in mold. Chill.
