2 T olive oil
4 C sliced zucchini
1 large onion sliced thin
1-pint mushrooms sliced
˝ bag baby spinach sliced
2 cans chicken broth
1 large can chopped tomatoes (may use Italian chopped tomatoes)
1 package frozen cheese tortellini (about 3 cups total) (may use dried tortellini just cook ahead of time)

Directions:
Directions:
Sauté zucchini, and onions until onions are transparent in a large soup pot. Add sliced mushrooms and sauté about 2 minutes. Add chicken broth and tortellini and cook as directed on package. Add spinach, tomatoes, and chicken. Bring to boil and put on low for about 10 minutes. Serve topped with Parmesan cheese
