Ingredients:
Ingredients:
8 eggs
8 oz salted butter
18 oz semi-sweet chocolate chips

Directions:
Directions:
Place chocolate chips and butter in microwavable extra large bowl.
Then melt the chips approximately 45-60 seconds at a time and stir well until just all of the chips are 90% melted. The residual heat will melt the rest along the way.
Have all of the eggs cracked and scrambled in another bowl.
Temper the eggs to the chocolate, by slowly adding a cup of the melted chocolate to the eggs to warm them slowly, while stirring well to distribute the heat. (You don't want coagulated/scambled eggs so add slowly).
Then you can add the rest of the eggs/small chocolate mixture to the rest of the chocolate. Have your waffle iron ready and be careful. They break easily when done.
Serve with sliced mango/berries and whipped or ice cream.

Personal Notes:
Making this works best with a single or double waffle iron, because when done I lift the whole iron up, open it, and let the waffles fall onto a "work plate." Then I transfer it to a serving plate because they are so fragile. Because there is no flour, there's not enough texture for it to be lifted out of your iron.
