5 lbs. hamburger
2 rounded tsp. Morton Tender Quick salt
2 1/2 tsp. garlic salt
2 1/2 tsp. ground pepper
1 tsp. hickory smoked salt or hickory smoke liquid
2 1/2 tsp. mustard seed

1st Day – Mix in large bowl, cover and refrigerate
2nd Day – Take out of refrigerator and mix with hands
3rd Day – Repeat above
4th Day – Form into 5 rolls and place of rack of broiler pan
Put in oven on 140Ί in bottom rack for 8 hours. Turn every 2 hours. It forms it’s own casing, does not fall apart. You may want to put more or less garlic salt. For extra spice you can add some dried chili hots or cayenne pepper.
