4 Pacific Halibut fillets (5-6 oz)
1 yellow bell pepper, sliced
4 Roma tomatoes, chopped
1 large onion, chopped
1 cup canned or frozen artichoke hearts (thawed, if frozen) drained and quartered
8 cloves garlic, minced
1 T. smoked paprika
1 lemon, thinly sliced
Kosher salt to taste
1/2 cup dry white wine

Preparation time: 20 minutes


Preheat grill to medium heat.
Combine: bell pepper, tomatoes, onions, artichoke hearts, garlic, paprika & salt in a bowl. Add wine and stir. Cut four pieces of heavy duty aluminum foil about 2 times the distance around food to be wrapped. Fold each sheet in half to form a double layer. Divide the vegetable mixture into four portions. Place one portion in center of each piece of foil. Place one fish fillet on vegetables in each packet. Top each fillet with a few (2-3) lemon slices. Bring opposite sides of foil together above food, folding edges over to make a 1" crease at top of each packet. Continue folding. Flatten edges and roll toward center to seal packets. Grill over direct heat, 10-20 minutes. Garnish with fresh parsley.
