1 pkg. yeast
1/2 c. water
3 tbsp. sugar
3 egg yolks
1/2 c. milk
4 c. flour
1 tsp. salt
1 c. butter
3/4 c. sugar
1 1/2 tsp. cinnamon
3 stiff beaten egg whites
1 1/2 c. chopped dates
1 c. chopped nuts

Dissolve yeast in lukewarm water. Stir in 3 tbsp. sugar. Stir egg yolks slightly and add milk. Sift flour and salt together. Cut in shortening till mixture resembles crumbs. Stir in yeast and egg yolk mixtures. Mix well. Form into ball, place in greased bowl and grease dough. Cover and chill overnight. Divide dough into 3 parts. Roll each part into 15 x 8” rectangle. Stir the 3/4 c. sugar and cinnamon into egg whites. Spread 1/3 of mixture over each dough – leave 1/2” around edge. Sprinkle each with 1/3 of dates and nuts. Roll and seal edges and ends. Place on greased baking sheet and form into crescent shapes. Let raise about 45 to 50 minutes. Bake 350º 25 minutes or browned. Frost while hot. Decorate if desired. Freeze if wish.
