4 c mashed potatoes
8 oz soft cream cheese
1 egg, beaten
1/3 c finely chopped onions
1 tsp salt
dash pepper
1 c shredded cheddar cheese (optional)

Directions:
Directions:
Combine mashed potatoes and cream cheese. Add beaten egg, onions, salt and pepper. Sprinkle shredded cheddar cheese over top if not using gravy.
Bake at 350 for 45 minutes in quart casserole dish.
