Flour tortillas (large)
eggs, scrambled
hash brown patties, cooked
bacon, fried & crumbled or chunked (optional)
sausage, fried & sliced (optional)
diced bell pepper
1/2 small can diced chiles
shredded cheese
butter
Green taco sauce (La Victoria)

Directions:
Directions:
Prepare the hash browns as directed. Cook scrambled eggs, bacon, sausage, and bell pepper all together in a skillet. Remove from skillet. Butter one side flour tortilla. Place tortilla butter side down on the hot skillet. Fill half the tortilla with one hash brown patty and egg mixture. Top with chiles, cheese and taco sauce. Don't over fill the tortilla or you won't be able to fold and flip it later. Fold the other side of the tortilla over the top to make a quesadilla. When browned, carefully flip and brown the other side. Repeat with the remaining ingredients to make enough quesadillas for the entire family.
