Thyme

Directions:
Directions:
Preheat oven to 375 degrees. Lay the beets on a large sheet of aluminum foil, drizzle with olive oil, toss the thyme on top, season with salt and pepper. Fold up the foil to make a sealed pouch and put it on a baking sheet and bake in oven until beets are tender when pierced, approx 45-60 minutes. Remove from oven let cool for 10 minutes and then peel and slice into inch thick slices.
