1 (2 lb.) bag frozen Southern hash browns, thawed
1/2 c. melted butter or margarine
1 tsp. salt
1 tsp. pepper
1/2 c. chopped onions
1 can cream of chicken soup
1 ( 16 oz.) sour cream
2 c. grated cheddar cheese

Mix together and put into a 9 x 13 buttered pan. Bake for 1 to 1 1/2 hours at 350º.

I use a packet of dry onion soup mix instead of the chopped onions and I sprinkle the top with Italian style bread crumbs before baking. You can
change the recipe up with variations of the cheese and spices.
