"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

2 packages Turkey gravy mix 1/4 cup flour 3 cups cold water 1 cup turkey pan drippings or turkey broth
Mix gravy mix and flour in large saucepan. Gradually stir in water and turkey drippings with whisk until smooth. Stirring frequently, cook on medium-high heat until gravy comes to boil. Reduce heat to low and simmer 5 minutes or until thickened, stirring occasionally. (Gravy will continue to thicken upon standing.)
Perfect Turkey gravy with Sage: stir 1/2 teaspoon rubbed sage into gravy mix.
Perfect Turkey Gravy with poultry seasoning: stir 1/4 teaspoon poultry seasoning into gravy mix.
