1 C. uncooked orzo pasta
2 T. olive oil
1 onion chopped
4 cloves garlic chopped
2 qts. chicken broth
1/2 c. dry sherry
1 (11 oz.) can undrained corn
1 (15 oz.) drained artichoke hearts
4 c. cooked chicken
10 lg. mushrooms quartered
1/2 tsp. salt
1/2 tsp. pepper
3/4 tsp. crushed red pepper flakes
1 (10oz.) frz spinach
1 (14.5 oz.) diced tomatoes drained

Directions:
Cook orzo pasta drain and set aside.
Heat oil and saute onion & garlic Med. heat until tender add chicken broth & sherry, mix in corn w/liquid, artichokes, chicken, mushrooms, salt & pepper and red pepper cook and stir until heated through 10 min. Mix in spinach, tomatoes and orzo cook 10 min. more until heated through
