Gingerbread Waffles Recipe

2 cups flour
1 T baking powder
2 T sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ginger
1.4 tsp. nutmeg
1/2 cup molasses
2 eggs, separated
6 T oil
1 cup milk

Spicy Applesauce Topping:
1 lb. can/jar of applesauce
1 T butter
1/4 tsp. cinnamon
1.4 tsp. nutmeg

Stir together dry ingredients in a large bowl. Mix everything else except egg whites together. Add to dry ingredients. Stir until just blended. Beat egg whites until stiff peaks form. Fold into batter.

Cook on hot waffle iron.

Mix topping ingredients together and heat thoroughly.
