1 cup flour
2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
2 T cocoa (baking cocoa, not the kind you drink)
1/2 cup milk
2 T shortening or margarine melted (zap in microwave)
1 cup brown sugar (packed)
1/4 cup cocoa (baking cocoa)
1 3/4 cups hot water

Directions:

Mix together dry ingredients - flour through 2 T cocoa. Stir in milk and melted shortening.

Spread in 9" pan and sprinkle with mixture of brown sugar and cocoa. (This can be done at anytime.) When ready to bake, pour hot water over batter.

Bake at 350 for 45 minutes. Or you can bake it and warm in microwave when ready to eat.

I made this cake to surprise Kath on her first birthday that we shared together. I emailed Linda and asked for a chocolate cake recipe and this is the one Linda sent with the following note. "Paul, good luck. You may have to ask Kathy if you have baking cocoa. I put everything together except the hot water on top. Then its ready to go whenever you are. The cake comes to the top and chocolate pudding forms on the bottom. It is really good. Have fun, Mom."
