1 lb. boneless skinless chicken breasts, cubed
1/4 cup prepared ranch dressing
1 cup finely crushed cornflakes
1/2 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder

Directions:
Directions:
Preheat oven to 400º. Grease large baking pan, set aside.
Pour ranch dressing into one bowl. Combine cornflakes, Parmesan cheese, salt, pepper and garlic powder in another bowl. In batches, coat the chicken first in the ranch dressing and then in the cornflake mixture. Place chicken in a single layer on the baking pan. Bake x 12-15 minutes or until chicken is no longer pink in the center.

I use the food processor to crush the cornflakes. Or put them in a large Ziploc bag and let the kids bash them with a rolling pin!
