2 cups crumbled corn bread
1 can (10 oz) enchilada sauce, divided
1 lb ground beef
1/2 cup shredded cheddar or Mexican cheese blend

Directions:
Directions:
In a large bowl, combine the corn bread and about 3/4 of the can of enchilada sauce. Mix well. Add the beef and mix well. Place in meatloaf pan, cover with aluminum foil and bake at 350º x about 1 hour or until the center reads at least 160º. Drain off grease. Spread remaining enchilada sauce on top and sprinkle with cheese. Bake x 5-10 minutes longer or until cheese melts.
