4 eggs
1 cup honey
1 cup vegetable oil
2 cups mashed bananas (at least 4 bananas)
1 cup peanut butter
2 tsp vanilla
3 cups stirred flour
2 Tbsp baking powder
1 tsp baking soda
1 tsp salt

Directions:
Directions:
In a large bowl combine eggs, honey, oil, mashed bananas, peanut butter and vanilla. Mix well.
In another bowl combine the flour, baking powder, baking soda, and salt. Mix well. Add flour mixture to the wet mixture. Do not overmix.
Spoon batter into greased muffin cups (or use paper liners). Bake at 375º x about 15 minutes, or until a toothpick inserted in the center comes out clean.

I usually use half whole wheat flour and half all-purpose. Muffins freeze well for a quick breakfast or snack!
