2 cups regular oats
1/3 cup olive oil
1/3 cup honey (or more, to taste)
1 or 2 cups combination of any of the following: chopped nuts or seeds (peanuts, almonds, walnuts, pecans, sunflower seeds, flax seeds, flaked coconut, sesame seeds, etc)
Dried fruit, optional (raisins, Craisins, etc)

If desired, process the nuts in food processor or blender, especially if feeding to a small child. Mix well the oats and nuts and seeds. Add the olive oil, mix well. Add honey, mix well. Spread mixture onto a large greased baking sheet. Bake at 300º x about 20 minutes, then stir, and bake another 5-10 minutes, or until it starts to turn golden brown on top. Spread immediately onto waxed paper; allow to cool. Add dried fruit if desired. Store in airtight container, or in Ziploc bags in the freezer.
