2/3 C. packed brown sugar
1/2 C. butter, softened
3 oz. cream cheese, softened
1 egg
1 tsp. vanilla
1 1/2 C. flour
1 tsp. baking powder
1/4 tsp. salt
2/3 C. grated carrots
2/3 C. zucchini, grated and squeezed so extra liquid is removed
walnuts for garnish, if desired

Grease a 9x9 in. square pan. In a food processor grate carrots; then zucchini. Be sure to squeeze excess liquid from zucchini Set aside.

Beat together brown sugar, butter and cream cheese until fluffly. Stir in flour, baking powder and salt until blended. Stir in carrots and zucchini. Pour batter into pan. Bake at 350º for 30 minutes or until tooth pick comes out clean. Cool and frost with Cream Cheese Frosting. Garnish with chopped walnuts, if desired.
