1/2 lb (2 sticks) margarine or butter softened
1 c packed brown sugar
1/2 c granulated sugar
2 eggs
1 tsp vanilla
1 tsp coconut flavoring
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 c Quaker oats quick or old fashioned uncooked

Heat oven to 350. Beat margarine and sugar until creamy. Add eggs, vanilla, coconut flavoring. Add flour, salt, baking soda, cinnamon. Mix well. Stir in oats and mix well. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 10 to 12 minutes until golden brown. Cool 1 minute on cookie sheet transfer to wire rack.

Use 1 can cream cheese frosting. Frost between cookies and sandwich together.
