Crown Roast of Pork (10 lbs)
3/4 cup Butter
3 Lg Celery Stalks
1 cup finely chopped Onion
10 cups soft bread cubes
Chicken Broth
2 Eggs
1 tsp fresh Thyme
1 tsp Salt
1/2 tsp ground Sage
1/4 tsp Pepper
3-4 cups chopped Apples
1 lb bulk Pork Breakfast Sausage

Directions:
Directions:
Cook the pork sausage over medium heat. Drain the drippings and reserve 3 Tbsp of drippings--set aside to mix later with stuffing. Add the butter, celery and onions, cook until soft. Add the apples and saute for 2 minutes. Toss the pan contents with the remaining ingredients and mix stuffing well.

On the outside and inside of the roast, generously sprinkle salt, pepper, minced garlic and fresh thyme. Fill the center of the roast with stuffing and bake at 350 degrees for 2-2 1/2 hours.
