Ingredients: 1 egg 1 cup buttermilk 2 TBS Canola oil 1 cup all-purpose flour 1 TBS sugar 1 tsp baking powder 1/2 tsp soda 1/2 tsp salt
Additions: Chocolate chips, blueberries (fresh or frozen) Use your imagination

Directions:Beat egg; add remaining ingredients in order listed and beat with a whisk until smooth. Heat a non-stick griddle (lightly sprayed first) over medium heat. Test griddle by sprinkling a few drops of water on it: if they dance, you are ready.
Pour batter in puddles onto griddle. If adding chocolate chips or blueberries, do it now.Flip pancakes as soon as they are puffed and full of bubbles but before bubbles break. Bake other side until golden brown.
Serve with warm maple syrup (the real kind because its worth it) and butter. |

Notes: We always make these when Kaci comes to visit. Most of us know the recipe by heart but sometimes it helps to have it written down. Melted butter in the batter doesn't work as well as canola oil.
