3 c. egg noodles or 1 c. small pasta
1 lb. extra-lean ground beef
1 onion, chopped
1 small zucchini, cut into thin 2-inch-long strips
1 sweet green or red pepper, cut into cubes
1 1/4 c. sliced mushrooms
4 fresh tomatoes, cubed, or 1 can (14 oz.) tomatoes
1/2 c. tomato sauce
1 tsp. dried basil
1/4 c. fresh parsley
1/2 tsp. dried oregano
Salt and pepper to taste

Directions:
In large pot of boiling water, cook pasta until tender but firm; drain. Meanwhile, in large skillet, cook beef over medium heat, stirring to break it up, about 5 minutes or until it's browned; pour off all fat. Add onion and cook about 4 minutes. Add zucchini, sweet pepper and mushrooms and cook about 4 minutes, stirring over medium heat. Add tomatoes, tomato sauce, basil, parsley and oregano and simmer another 5 minutes. Stir in noodles and season with salt and pepper to taste.
