Pastry for 1-crust 9-inch pie
8 oz. bulk pork sausage
3 hard-cooked eggs, chopped
1 c. shredded natural Swiss cheese
1 c. shredded natural cheddar cheese
3 beaten eggs
1 1/4 c. light cream or milk
3/4 tsp. salt
1/8 tsp. pepper

Directions:

Line 9-inch pie plate with pastry; flute edges. Do not prick. Bake in 350º oven for 7 minutes. In skillet, cook sausage; drain well. Sprinkle hard-cooked egg in bottom of pie shell; top with sausage and cheeses. Combine beaten eggs, cream, salt, and pepper; pour over all. Bake in 350º oven for 40 minutes or till set. Let stand 10 minutes before serving.
